4 Layer Nacho Dip

Guacamole ingredients:

  • 3 semi-ripe avocados
  • 2 cloves of crushed garlic
  • 1/2 zest of lemon
  • 1 lime (juice + zest)
  • 2 dashes of tabasco
  • 1/4 red onion finely chopped or 1 shallot
  • 1 tsp honey
  • 1tsp finely chopped cilantro

Combine all ingredients and adjust seasoning with salt and pepper.

Dip ingredients:

  • 2 Cups chunky salsa (medium)
  • 1.5 cups light sour cream
  • 1 cup grated cheddar
  • 1/2 cup Monterey jack cheddar
  • 1 Jalapeno de-seeded finely chopped

In a deep clear dish evenly spread the guacamole. Then carefully spread the sour cream, be careful not to disturb the guacamole layer by placing dollops of sour cream and flattening them. Then add an even layer of the salsa followed by the cheese. Lastly sprinkle the minced jalapenos on top for bite and colour. This layered dip is a huge smash with dinner parties and works with any nacho chip. For an additional depth of flavour you can add a layer of refried beans and it remains a vegetarian hit.
