Carrot Soup

Carrot Soup

Yield: 2-4 people

Prep. Time: 20 minutes

Cook Time: 30 minutes

Ingredients:

4-6 medium sized Orange Carrots, peeled and cut into medium size dice

1/2 White Onion, cut into small dice

3 Garlic Cloves, minced

3 cups Chicken Stock

2 Sprigs Thyme, leafs removed off the stem

2 tbsp Unsalted Butter

Method:

Place a medium size pot filled with water over high heat and bring to a boil. Add carrots and reduce heat to medium. Cook the carrots till fork tender, remove and strain. Place a clean medium size pot over medium heat. Add butter, onions, thyme, garlic and sauté for 15 minutes on low heat. Add carrots, stock and bring to a simmer. Cook for 10-15 minutes. Remove and place content in a blender and blend on high till smooth. Remove and place content in a clean pot. Season salt and white pepper to taste. Serve hot when ready.
