Pineapple Salsa

Ingredients:
- 1/4 of Pineapple, skinned, cored and cut into small dice
- 1 Jalapeño, seeded, cored, and minced
- 1/2 Shallot, Minced
- 2 cloves Garlic, Minced
- 2 tsp Lemon Juice
- 1/2 bunch Scallions, Minced
- 1 tsp Sugar
- Salt and Pepper
Method:
Add all ingredients to a medium size bowl and mix together using a spoon or fork. Season to taste with salt, pepper and lemon juice.
