What is induction cooking and how does it work?

When you place a pan on an induction cooktop and turn on the cooktop, an electric current travels through a coiled copper wire, which produces and applies heat directly to your pan.

Induction compatible pots and pans
Most common types of cookware material are compatible with induction cooktops. This includes cast-iron, steel, magnetic stainless steel, ceramic-clad, and enameled pots with an iron pan hidden in the ceramic layer. Fortunately, this means that you can use most pots and pans on your induction cooktop. To be sure, simply place a magnet at the bottom of your cookware. If the magnet sticks, your cookware can be used with your induction cooktop. Remember to use quality pots and pans, such as those offered by Bosch, to ensure the most even cooking and best heat distribution.
Requires little maintenance

How to clean induction cooktops
One of the greatest benefits of inductions cooktops is the ease of keeping it clean. There are no grates that need to be removed and cleaned separately like with gas cooktops.
Simply wait for the cooktop to cool and apply a small amount of cooktop cleaner with a clean cloth. Then, wipe the surface with a damp cloth and use a soft cloth to dry it.
For dried-on food, let the cooktop cool and scrape it off with a glass scraper. Be sure to use the scraper at a low angle (such as 20° or 30°) to avoid scratching your cooktop.
